KellyPosts: 0 | I found a recipe online and made a few changes- good side dish! Feeds about 6 people! Ingredients: 1 Spaghetti squash, halved lengthwise and seeded 2 tablespoons vegetable oil 1 onion, chopped 1 clove garlic, minced 1.5 cups chopped tomatoes 3/4 cup crumbled feta cheese 2.5-3 oz. spinach leaves 3 tablespoons sliced black olives
Directions- 1. Preheat the oven to 350 degrees F. Lightly grease a baking sheet. 2. Place spaghetti squash cut sides down on the baking sheet and bake 30 minutes in the oven or until a sharp knife can be inserted with only a little resistance. To make the squash softer, you can put a very thin layer of water on the baking sheet while you bake the squash. Remove the squash from the oven, and set aside to cool. 3. While the squash is baking, heat oil in a skillet over medium heat. Saute onion in oil unitl tender. Saute spinach until tender. Add garlic and saute for 2 to 3 minutes. Stir in the tomatoes and cook only long enough to make them warm. 4. Use a large spoon to scoop the stringy pulp (when you scoop it you will see how it gets its name!) and place in a medium bowl. Toss with the sauteed vegetables, feta cheese and olives. Serve warm! Enjoy! |
